Focus On Nutrition - The Powerhouse Sweet Potato

Although it can't leap tall buildings in a single bound, the sweet potato is still a member of an elite group of foods known as Super Foods, and rightfully so.

The sweet potato is one of the oldest known cultivated foods in the Americas dating back around 9,000 years ago.  Today, the sweet potato has become a popular vegetable on our tables and is basically interchangeable in any recipe that calls for other potatoes such as the Russet. We can enjoy them in sweet potato pies, sweet potato burritos, sweet tater fries, baked and many other ways.

A medium sized sweet potato will have about 100 calories in it and a healthy portion of fiber!  There is no saturated fat or cholesterol in a sweet potato and there is a whopping 400% of the daily recommended allowance of Vitamin A.  Sweet potatoes are rich in anti-oxidants and minerals such as potassium and manganese.

So, add sweet potatoes to your weekly diet and maybe before you know it you'll be faster than a speeding bullet, more powerful than a locomotive... maybe.
