Here is this weeks suggested tailgating food - the Linebacker Loaded Reuben. How we love our Reuben sandwiches. Easy to make and absolutely delightful.
Here is what you'll need.
Thinly sliced corned beef about 4 ounces
2 ounces or two 1 ounce slices of Swiss cheese.
2 slices of rye bread.
1 1/2 tbsp. Best Choice Thousand Island salad dressing.
1/3 cup of sauerkraut.
2 tablespoons of Best Choice butter softened.
A slight pinch of caraway seed.
Here is what you'll do.
Lay out the corned beef and cheese long enough to get it to room temperature.
Heat kraut until it's warm.
Butter one slice of bread on one side with half of the butter on hand. Place the buttered side of the bread down in a skillet.
Then add one slice of the Swiss cheese followed by the corned beef and then by the Thousand Island dressing. Then add the kraut (well drained) followed by the caraway seed and then add the remaining slice of Swiss cheese.
Top the sandwich off with the remaining slice of bread and spread the remaining butter on the outside of the bread.
Heat the sandwich in the skillet over medium to low heat until bottom side becomes golden brown, then flip and lightly brown the other side.
Serve with a pickle and chips.
